Spring Rolls | Dilli Walle – Dhaba Style !

    Ingredients

    For Wraps Batter

    • Maida - 16 Tbsp
    • Corn Starch - 4 Tbsp
    • Salt - 1 Tsp
    • Water - 1.25 Cup
    • Oil - For Frying

    To Boil Noodles

    • Noodles - 220 GMS
    • Oil - 2 Tbsp
    • Salt - 1 Tsp
    • Water - Enough to cover the noodles to boil

    To Make Chilli Garlic Chow Mein

    • Seasame Oil - 2 Tbsp
    • Garlic - 2 Tbsp
    • Chilli Flakes - 1 Tsp
    • Green Chillies Chopped - Chopped - 3
    • Onions - 1 Cup Thin Sliced
    • Spring Onions Bulbs - 6 Bulbs Chopped
    • Carrots - 1/2 Cup Thin Sliced
    • Cabbage - 1 Cup Thin Sliced
    • Green Bell Pepper / Capsicum - 1/4 Thin Sliced
    • Red Bell Pepper / Capsicum - 1/4 Thin Sliced
    • Orange Bell Pepper / Capsicum - 1/4 Thin Sliced
    • Black Pepper Powder / Kali Mirch - 1 Tsp
    • Soya Sauce - 2 Tbsp
    • Vinegar - 1/2 Tsp
    • Green Chilli Sauce - 1 Tbsp
    • Spring Onions - 4 Tbsp
    • *** You should not have to add salt sepertaely as the Soy And Green Chilli Sauce are pretty salty.
    • Add if needed per your taste**

    Instructions

    For Batter

    1. Add Maida, Corn Starch, Salt and water in a mixing bowl and mix well.
    2. The batter should be of very thin consistency.

    For Wraps

    1. Take a pan on very low heat.
    2. Rub little oil over the pan with some paper towel or cloth.
    3. Take around 2 Tbsp mixture on the pan and spread it on the pan with a brush.
    4. Let it cook on low till it starts curling from the edges.
    5. Carefully take it off the pan and keep aside.
    6. Repeat the process

    To Boil Noodles

    1. Boil water in a big pan.
    2. Add Oil, Salt and Noodles to boiling water.
    3. Let it boil for 10 -15 minutes ot till the noodles are cooked 90%.
    4. Turn off the flame, strain the noodles and wash in cold water.
    5. Apply some oil on your hands and run it through the noodles.
    6. Keep it aside.

    To Make Chilli Garlic Chow Mein

    1. Heat Pan on high heat throughout the cooking process.
    2. Add Seasame Oil and let it warm a little. Don't heat it too much
    3. Add Garlic, Chilli Flakes, Green Chillies and Onions. Mix well and Cook for 2 minutes.
    4. Add Spring Onions Bulbs and Cook for 2 more minutes.
    5. Add Carrots and Cabbage and cook till you see cabbage is cooked. It should get soft.
    6. Add Bell Pepper Mix and cook for 2 to 3 minutes more minutes.
    7. Add Boiled Noodles and Mix everything well.
    8. Add Black Pepper Powder, Soya Sauce, Vinegar and Green Chilli Sauce. Mix all ingredients well.

    For Spring Rolls

    1. Place one wrap on a flat surface.
    2. Add and spread some noodles on the wrap.Leave some room on the sides.
    3. Fold in the sides and roll.
    4. Once you reach the end, put some batter on the edges and roll. this will help seal the edges.
    5. Repeat the process for all rolls and keep aside.

    For Shallow Frying.

    1. Heat some oil until medium hot.
    2. Add spring rolls and fry on both sides until golden brown.
    3. Garnish with Spring Onion Greens and Serve with hot sauce 🙂
