Sooji Rava Upma Dhaba Style

    Ingredients

    • Sooji - 1 Cup
    • Ghee / Clarified Butter or Oil - 2 Tbsp
    • Rai / Mustard Seeds - 2 Tsp
    • Urad Dal / Split & Dehusked Black Gram - 1.5 Tsp
    • Chana Dal / Yellow Split Peas - 1.5 Tsp
    • Cashews - 10 to 12 Chopped
    • Onion - 1.2 Cup Finely Chopped
    • Green Chillies - 4
    • Ginger - 1/2 Inch Finely Grated
    • Dry Red Chillies - 2 Broken
    • Water - 2.5 Cups
    • Salt - 1.5 Tsp
    • Lemon - According to Taste
    • Cilantro - 1 Tbsp

    Instructions

    Dry Roast Rava / Sooji

    1. Take a dry pan on medium heat.
    2. Add Sooji/ Rava and Dry roast for 2 to 3 minutes.

    Upma

    1. In a big pan on medium to high heat, add Ghee.
    2. Once Ghee is heated add Mustard Seeds.
    3. Once Mustard Seeds start to pop add Urad Dal and Chana Dal.
    4. Cook till the Dal's starts to turn brown.
    5. Now add Cahews and cook till they get golden.
    6. Add Onion Green Chillies and Cook till onions are translucent.
    7. Add Ginger, Dry Red Chillies and Chopped Curry Leaves.
    8. Cook till raw aroma of ginger disappears.
    9. Now Add Water, Salt and Mix well.
    10. Once Water Starts to Bubble add 1/4th of Sooji/Rava.
    11. Mix well.
    12. Now add some more Sooji and Mix. Do this till all the Sooji is added to the Pan.
    13. This is done in parts so the Sooji can absorb water Properly.
    14. Cook for 2 to 3 minutes.
    15. Now cover the pan with a lid and lower the flame to low.
    16. Cook for another 2 to 3 Minutes.
    17. Before Serving Add lemon juice and Cilantro
