Palak Paneer – How to Make Palak Paneer Dhaba Style!!

    Ingredients

    Frying Paneer

    • Ghee - 2 Tbsp
    • Paneer - 400 Gms
    • Water - 2 Cups

    For Boiling Spinach

    • Spinach - 2 Bunches
    • Water for Boiling
    • Ice Cold Water for Immersing Spinach

    Cilantro/Dhaniya Paste

    • Cilantro - 3 Tbsp
    • Water - 1 Tbsp

    For Gravy

    • Ghee - 2 Tbsp
    • Cumin / Jeera Seeds - 2 Tsp
    • Hing / Asafoetida - 1/4 Tsp
    • Garlic - 2 Tbsp
    • Green Chillies - 4
    • Ginger Paste - 1 Tbsp
    • Bay Leaf - 2
    • Onion - 1 Chopped
    • Yogurt - 1 Cup
    • Coriander Powder - 1.5 Tbsp
    • Turmeric - 1 Tsp
    • Black Salt - 1.5 Tsp
    • Salt - 1.5 Tsp
    • Kashmiri Red Chilli Powder - 2 Tsp
    • Roasted Cumin Powder - 1 Tsp
    • Garam Masala - 1 Tbsp

    Instructions

    Frying Paneer

    1. In a pan on medium heat add Ghee. Let the Ghee heat.
    2. Add Paneer to the pan and fry till light gold on both sides.
    3. Remove the paneer from pan and Immediately add the Paneer in water. We do this so the paneer stays soft.
    4. Let it soak till its ready to be used.

    Boil Spinach

    1. In a big pan take water for boiling Spinach.
    2. Let the water come to a boil and Add Spinach.
    3. Let it boil for 2 minutes. Remove it and immediately add it to Ice cold water.
    4. Make a Paste before adding to the Gravy.

    Cilantro Paste

    1. In a grinder add Cilantro and water. Make a paste.
    2. Keep it aside till its time to use.

    Gravy

    1. In a big pan on medium high heat add Ghee.
    2. Once Ghee is heated, add Cumin, Hing and Garlic.
    3. Cook it for 1 minute.
    4. Add Green Chillies and Ginger , cook it for 1 more minutes or till the raw aroma of ginger disappears.
    5. Now Add Bay Leaf and Onion. Cook till the onions are cooked and translucent.
    6. Add Yogurt and cook for 2 minutes.
    7. Now add the spices. Coriander Powder, Turmeric, Black Salt, Salt, Kashmiri Red Chilli Powder.
    8. Cook Yogurt very well.
    9. Now add Spinach paste, Roasted Cumin Powder, Garam Masala, Cilantro Paste and Mix Well.
    10. Cook for 3 to 4 minutes.
    11. Now add Paneer and cook for a few more minutes.
