    Ingredients

    • Ghee - 3 Tbsp
    • Cinnamon - 2 Inch Stick
    • Black Cardamom - 3
    • Cloves - 9
    • Green Cardamom - 3
    • Shah Jeera / Caraway Seeds - 1.5 Tsp
    • Star Anise - 4
    • Kabab Chini / Cubeb - 4
    • Javitri / Mace Flower - 2
    • Bay Leaf - 2
    • Dagad Phool / Stone Flower - 2 Tsp
    • Onion - 1 Big Sliced
    • Ginger - 1.5 Tbsp Chopped
    • Green Chillies - 6
    • Cauliflower / Gobi - 2 Cup Chopped
    • Green Beans - 1 Cup Chopped
    • Peas - 1/2 Cup
    • Carrots - 1 Cup Diced
    • Potato - 3/4th Cup Diced
    • Red Chilli Powder - 2 Tsp
    • Turmeric - 1/2 TSp
    • Salt - 2.5 Tsp
    • Rice - 2 Cup Soaked for 30 Minutes
    • Water - 2 Cups
    • Cilantro / Dhaniya Leaves - 1/2 Cup Chopped
    • Mint Leaves - 1/4 Cup Chopped

    Instructions

    1. In a Pressure Cooker on Medium Heat add Ghee.
    2. Once the Ghee is heated add all the Listed Dry Spices Cinnamon - 2 Inch Stick, Black Cardamom - 3 , Cloves - 9 , Green Cardamom - 3, Shah Jeera / Caraway Seeds - 1.5 Tsp Star Anise - 4, Kabab Chini / Cubeb - 4 , Javitri / Mace Flower - 2 , Bay Leaf - 2 and Dagad Phool / Stone Flower - 2 Tsp.
    3. Saute the spices for 1 to 2 minutes.
    4. Now Add Onions and Saute till golden.
    5. Now add Ginger and Green Chillies.
    6. Cook till raw smell of Ginger Goes Away.
    7. Now Add all the Vegetables Cauliflower / Gobi - 2 Cup (Chopped) , Green Beans - 1 Cup (Chopped) , Peas - 1/2 Cup , Carrots - 1 Cup (Diced) and Potato - 3/4th Cup (Diced).
    8. Saute for 2 Minutes.
    9. Add the spice powders Red Chilli Powder - 2 Tsp, Turmeric - 1/2 TSp and Salt - 2.5 Tsp.
    10. Now Add Rice - 2 Cups and Water 2 Cups.
    11. Mix everything very well.
    12. Add Cilantro 1/2 and Mint Leaves 1/4 cup.
    13. Close the Pressure Cooker and Cook for 1 Whistle if using 7 Liter cooker (More Whistles might be needed if using smaller cooker).
    14. Let the Cooker Depressurize on its own.
    15. Open the cooker and fluff the rice.
