Dhaba’s have their own variations when it come to Aloo dishes. This one is my favorite dry aloo recipe and is one of those dishes that’s very hard to find. It’s simple and easy to replicate authentic Indian Aloo recipe.

This recipe goes by many names Chatpata Masala aloo recipe, masala aloo, spicy tangy potatoes, potatoes without cumin seeds, masala aloo without onion and garlic, aloo ki sabzi, aloo sabji, dry aloo sabzi, sukhi aloo sabzi, aloo fry recipe, Indian aloo fry, aloo ki sukhi sabzi, aloo ka bhujiya, potato fry, quick & easy aloo sabzi.

This dish is mostly served on top of chana masala or chole. This can be had as a main course by itself.

This authentic recipe will teach you how to make perfectly tangy spicy aloo easily at your home with very little effort.

Ingredients

Spices Mix

  • Coriander Powder - 2 Tbsp
  • Amchur / Dried Mango Powder - 1.5 Tsp
  • Roasted Cumin Powder - 1.5 Tsp
  • Kashmiri Red Chili Powder - 1 Tbsp leat spicy variety
  • Kala Namak / Himalayan Black Salt - 1/2 Tsp
  • Garam Masala - 1.5 Tsp
  • Salt - 1 Tsp

Recipe

  • Aloo / Potatoes - 5 Medium
  • Bay Leaves - 3
  • Hing / Asafoetida - 1/2 Tsp
  • Yogurt / Curd - 1/2 Cup
  • Ghee - 2 Tbsp

Instructions

Spices Mix

  1. In a bowl, add all the spices in spice mix list and mix them very well.

Recipe

  1. Boil the Potatoes.
  2. Peel and chop the potatoes in big chunks and keep it in a big bowl.
  3. Sprinkle the the spice mix on the potatoes.
  4. Gently toss them to get the potatoes evenly coated with spices.
  5. Rest Potatoes for 30 minutes after adding the spice mix.
  6. Now take a deep pan and set the stove to medium heat.
  7. Add 2 Tbsp Ghee in it.
  8. Once the Ghee is hot add Hing|Asafoetdia and Bay leaves to it. Cook for 2 minutes.
  9. Now add strained yogurt.
  10. Cook it for 5 to 6 minutes. Yogurt should be properly cooked.
  11. Now add the seasoned Potatoes to the pan and mix them so that they get coated with the yogurt mix.
  12. Cover the pan with a lid and turn the flame to low.
  13. Cook for 5 mins on low.
  14. Serve Hot! 🙂
